Mack's Barbecue Stand



    The year was 1917 and Jimmy McCollum and his father, Joe, and his brother, Hugh McCollum started the first stand in a small shack with a sliding window. The second building was built with a pit and bbq was sold by the pound and sandwiches through the window. Business was so good a third building was built with a bar and room for booths, tables, and chairs. Jimmy sold the business to his sister, Gladys McCollum Dalton, in 1937.



    Gladys and her husband, Ike, ran the business for several years. Since the beginning of Mack's Barbecue Stand there have been many owners and continues today as a Cairo landmark serving bbq at its best.
